Ingredients

  • Apple cider vinegar - 2 tsp
  • Soy milk - 1 cup
  • Sugar - 2 cups
  • All-purpose flour - 2 cups
  • Cocoa powder - ¾ cup
  • Baking powder - 1 tsp
  • Baking soda - 2 tsp
    • Sea salt- 1 tsp
    • Oil - 2 tsp
    • Vanilla extract - 2 tsp
    • Coffee water - 1 cup (Boiling water mixed with 1tsp instant coffee mix)

Chocolate frosting

Directions For Cake

      • Take two 9 inch cake pans. Grease, flour, and line it with parchment paper
      • Preheat oven to 180 degrees celsius
      • In a bowl, add apple cider vinegar to the soy milk. Once it curdles, set aside
      • In another bowl, add sugar, flour, cocoa powder, baking powder, baking salt, and whisk it to perfection. Then add the milk mixture, oil, vanilla and coffee water. Beat the mixture together for about 2minutes
      • Pour the batter into the cake pan and bake it for 35 minutes. Leave it in the pan for at least 1 hour before removing it completely

Directions For Chocolate Frosting

    • Add cocoa powder, powdered sugar, vegan butter, sea salt, vanilla extract, vegan milk and mix it all together at a slow speed. You can pick up the speed gradually and add sugar appropriately to make it thicker.

2. Vegan Black Forest Cake

Ingredients

For the whipping cream

  • Soy milk - 2 cups
  • Melted coconut oil - 2 cups
  • Granulated sugar - ½ cup
  • Xanthan gum - ½ tsp (optional)
  • Vanilla Extract - 3 tsp

For the cherries

    • Frozen cherries - 1lb
    • Sugar - ½ cup
    • Cherry brandy - 1 cup

Instructions For whipping cream

  • Add all the ingredients to a small bowl and combine it with a high-speed blender
  • Pour it into a clean container and refrigerate it. Preferably overnight
  • Make sure you do not over-whip it, as it can get really tight. If you do over whip it, add soy milk and fold to loosen the mixture

  • Keep aside 10 fresh cherries to top off the cake and garnish
  • For layering the cake, chop frozen cherries and place them in a bowl full of sugar
  • Add cherry brandy and simmer the entire mixture on a slow flame until the sugar dissolves. Let it cool and fold

Assemble the cake

  • Spread the cherry compote evenly on top of two 9 inch chocolate cake bases. Place them on top of each other
  • Start smearing the whipping cream evenly on the sides and the top. Frost the entire cake
  • Make sure the top of the cake has a generous amount of cream and top it off with fresh cherries and grated chocolate

Ingredients

  • All-purpose cake flour - 3 ¼ cup
  • Granulated sugar - 1 ¼
  • Baking powder - 1 tbsp
  • Baking soda ½ tsp
  • Coconut cream - 1 ½ cup
  • Unsweetened apple sauce - ¾ cup
  • Vanilla extract - 1 tsp
  • Coconut extract - 1 tsp
  • Coconut shreds - 1 cup

Ingredients for coconut cream frosting

  • Vegan butter - 1 cup
  • Vegan cream cheese - 1 cup
  • Powdered sugar -4 cups
  • Coconut cream - 2 tbsps
  • Toasted coconut - 1 cup

Instructions

    • Preheat the oven to 176 degrees celsius and grease three 6 to 8-inch cake pans
    • Take a large bowl and whisk sugar, baking powder, baking soda and flour together
    • In a separate bowl, add coconut cream, vegan butter, applesauce, vanilla and coconut extract together and mix thoroughly. Then add the coconut flakes
    • Now add in all the wet ingredients to prepare the coconut batter, make sure they aren’t any clumps
    • Pour it into the cake pans and Bake it for 22-25 minutes

Instructions for Frosting

      • In a large bowl, add vegan butter, vegan cream cheese and cream it for 2-3 minutes
      • Add powdered sugar and beat it for a few minutes to thicken
      • Now add the vanilla extract and coconut cream and whip

For Carrot Cake

  • All-purpose flour - 2 cups
  • Baking powder - 1 tsp

  • Nutmeg - 1 tsp
  • Cinnamon - 2 tsp
  • Light brown sugar - 1 ½ cup
  • Grated carrot - 2 ⅓ cup
  • Flax eggs - 2
  • Vegetable oil - ½ cup

  • Apple cider vinegar - 1 tbsp
  • Walnuts - 1 cup

For Frosting

  • Vegan butter - ½ cup
  • Powdered sugar - 4 cups
  • Vanilla extract - 1 tsp
  • Fresh lemon juice - 2-3 tsp

  • Preheat the oven to180o celsius and spray two 7 inch cake pans with non-stick spray and line it with parchment paper
  • Add all-purpose flour, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl and mix them together
  • Now add the brown sugar and grated carrot
  • For flax eggs, you need to add boiling water to the ground flaxseed meal. Let it sit for some time to become gloopy

  • Sunflower oil - 160 ml

  • Vegan block margarine - 250g
  • Icing sugar - 500g
  • Vanilla extract - 1 tsp
  • Pinch of salt

Instructions

  • Preheat oven to 1800 celsius, grease and line three 9 inch cake pans with parchment
  • In a large bowl, cocoa powder, flour, caster sugar, baking powder and salt
  • Now add the wet ingredients like vegan milk, vanilla extract, yoghurt and oil to another bowl
  • Mix everything together and add the red colouring agent for the desired colour
  • Pour the batter into cake pans and bake for about 20-22 minutes
  • For the icing, mix all the ingredients together until they are pale and smooth
