1. Cauliflower Chicken Curry

Ingredients:

  • Diced chicken breasts -2
  • Cumin Powder
  • Coconut oil -2 tablespoon (30ml)
  • Cauliflower - ½ a head
  • Pinch of salt and pepper
  • Coconut cream - ½ cup (120ml)
  • Chicken/Bone broth - 1 cup (240ml)
  • Garlic powder - 1 tablespoon
  • Curry powder - 3 tablespoons

Instructions

  1. In a casserole, add the coconut oil and roast the diced chicken until it is brown. Sprinkle it with cumin powder and salt.
  2. Blend cauliflower, broth and coconut cream together.
  3. Pour the mixture into the casserole with chicken in it and season with curry powder and garlic powder. Mix and cook until the chicken pieces are tender for approx. 50 minutes.
  4. Season with extra salt and pepper.

      2. Chicken Thighs- Tandoori Style

      Ingredients for the first marinade

      • Chicken Maryland - 1.5 Pounds
      • Kashmiri chilli powder - 1 teaspoon
      • Salt - 1 teaspoon
      • Lemon juice - 1 teaspoon
      • Crushed garlic - 1 teaspoon
      • Crushed ginger - 1 teaspoon
      • Olive oil - 1 teaspoon

      Ingredients for the first marinade

      • Full-fat Greek/natural yoghurt - ¼ cup
      • Crushed garlic- 1 tablespoon
      • Chilli powder - 1tablespoon
      • Salt - 1 tablespoon
      • Cinnamon - ½ tablespoon
      • Ground Cumin - ½ tablespoon
      • Ground Paprika -½ tablespoon
      • Allspice - ½ tablespoon
      • Garam masala - ½ tablespoon
      • Lemon - 1 teaspoon

      Instructions

      1. Cut the chicken into 4-5 slits.
      2. Mix all the ingredients in the first marinade and rub it over the chicken legs. Ensure it fills in the slits too.
      3. Marinate it for 30 mins in the fridge.
      4. Now mix the ingredients of the second marinade and pour it over the chicken and run it throughout.
      5. Marinate it for 30 minutes again in the fridge.
      6. Preheat the oven to 374F.
      7. Roast the chicken for 30-40 minutes until the skin is crispy.
      8. Serve with squeezed lime.

          3. Desi Chinese Shredded Chicken in Soya Sauce

          Ingredients:

          • Chicken breast
          • Garlic cloves - 2
          • Ghee - 1 tablespoon
          • Soya sauce - 1 tablespoon
          • Black pepper - ½ tablespoon
          • Salt, if necessary

          Instructions

          1. Slice the chicken breasts into fine pieces.
          2. Add black pepper, soya sauce and chilli flakes into a bowl.
          3. Let the chicken marinate for 30 minutes.
          4. On a headed pan, toss the garlic gloves.
          5. Add the chicken next and cook it on a high flame.
          6. Garnish and serve the chicken

              Ingredients

              • Ground chicken - 2lbs
              • Grated yellow onion - 1(150g)
              • Cilantro chopped - ¼ cup

              • Turmeric - ⅓ tablespoon
              • Paprika - ⅛ tablespoon
              • Sea salt - 1 ½ tablespoon
              • Black pepper -1 ½ tablespoon
              • Chopped chillies - 1-2 tablespoons
              • Dried saffron/ saffron powder - ¼ tablespoon
              • Lime juice - 2 tablespoons
              • Virgin oil/ melted ghee - ½ tablespoon

              Instructions

              1. Wash and mince the mutton. Chop green chillies, onion and coriander leaves.
              2. Preheat the oven to 230C.
              3. Blend minced mutton, chillies, onion and coriander into a paste and transfer into a bowl.
              4. Add ginger-garlic paste, salt, garam masala, chilli powder and cumin powder.
              5. Shape it into kebabs and put them into skewers.
              6. Place the skewers in the oven and cook until they are reddish-brown, add butter at intervals.
              7. Serve hot with some sprinkled chat masala and lemon on top.

                  5. Butter Chicken - The Keto Way

                  Ingredients:

                  • Cubed chicken breasts - 1.5lbs
                  • Garam masala - 4 tablespoons
                  • Grated ginger - 5 tablespoons
                  • Minced garlic - 5 tablespoons
                  • Greek yoghurt - 4oz
                  • Coconut oil - 1 tablespoon
                  • Crushed tomatoes - 14.5 oz
                  • Onion - 1
                  • Cumin -2 tablespoons
                  • Chilli - 1 tablespoons
                  • Ground coriander - 2 tablespoons
                  • Heavy cream - ½ cup
                  • Salt - a pinch

                  Instructions

                  1. Blend Tomato, onion, garlic and ginger into a puree.
                  2. Marinate the cut chicken pieces in methi, chilli powder salt, turmeric, chilli powder, cumin and garam masala.
                  3. Fry the chicken with olive oil until it becomes a certain colour and keep flipping the pieces.
                  4. Add the puree to the chicken pieces and cook for about 10 minutes.
                  5. Once cooked, add heavy cream and serve.

                      6. Fish In Tomato Curry

                      Ingredients:

                      • Fish fillets - 300 grams
                      • Tomato puree - 100 ml
                      • Coconut cream - 200 grams
                      • Onion - 100 grams
                      • Mustard seeds - 1 tablespoon
                      • Ginger garlic paste - 10 grams
                      • Curry leaves - 10
                      • Dried red chilli - 1
                      • Green chilli - 1
                      • Ghee - 1 tablespoon
                      • Coriander powder - 1 tablespoon
                      • Turmeric - 1 tablespoon
                      • Kashmiri red chilli - 1 tablespoon
                      • Salt and coriander leaves for garnish
                      • Kokum - Couple of pieces

                      Instructions

                      1. Begin by grinding the onion and then cut your fish fillets into pieces. In 50 ml of boiling water soak the kokum.
                      2. Heat the ghee in a large casserole and add mustard seeds once melted.
                      3. Cook the mustard seeds over medium heat until they pop, then add green and dried chillies into the curry leaves. Cook for a minute.
                      4. Cook for about 4-5 minutes on low-medium heat until the onions get some colour. Add the ginger and garlic paste and cook a little longer.
                      5. Then add chilli and coriander powder with turmeric. Cook the spices for approximately 1 minute before adding water, tomato puree and kokum. Add approximately 50ml more water.
                      6. Cover with a lid and cook for 5-8 minutes on low heat until the oil is separated from the tomato puree.
                      7. Add and mix in the coconut cream. Season with salt.
                      8. Insert the fish pieces and boil the curry. Reduce the heat until the curry is soft. Cover them and cook for approximately 4-5 minutes.
                      9. After the fish is cooked, turn the heat off and finish with fresh coriander.

                          7. Curried Egg

                          Ingredients:

                          • Boiled eggs - 4
                          • Tomato - 100 grams
                          • Onion - 50 grams
                          • Garlic - 5 grams
                          • Ginger – 10 grams
                          • Ghee - 1 tablespoon
                          • Green chill - 1
                          • Red chilli powder - ½ tablespoon
                          • Turmeric - ¼ tablespoon
                          • Garam masala - ¼ tablespoon
                          • Coriander powder - ½ tablespoon

                          Instructions

                          1. Put eggs in hot water for 6 minutes at room temperature.
                          2. Set aside the eggs after peeling them.
                          3. Make onion paste with ginger and garlic.
                          4. Prepare tomato puree.
                          5. In a casserole heat ghee and sauté the onion, ginger, garlic and chilli paste.
                          6. After the paste is brown add garam masala, coriander and turmeric powder.
                          7. After cooking for 2 minutes add the tomato puree, water and salt.
                          8. Cook for about 10 minutes.
                          9. Add the eggs now and cook for another minute.
                          10. Garnish and serve.

                              The Vegetarian Keto Recipes

                              1. Paneer Stuffed Capcicum

                              Ingredients:

                              • Red bell pepper - 1
                              • Yellow bell pepper - 1
                              • Green bell pepper - 1
                              • Chopped paneer - 1 Cup
                              • Tomato - 1 cup
                              • Onion - 1 cup
                              • Garlic cloves - 2
                              • Grated cheese - 1 cup
                              • Oregano mix - 1 tablespoon
                              • Regular/ pink salt - 1 tablespoon
                              • Red chilli flakes - 1 tablespoon
                              • Olive oil - 2 tablespoons
                              • Black pepper powder - 1 tablespoon
                              Instructions
                              1. Slice the bell pepper lengthwise and plunge them into hot water.
                              2. Crumble the paneer and add chillies or chilli powder, garam masala, chopped red onion and salt. Mix them to a mush.
                              3. Stuff the bell pepper with paneer mix and bake in the oven at 350 degrees C for 20 minutes.
                              4. Squeeze lemon and dig in.

                                  2. Cauliflower Upma

                                  Ingredients:

                                  • Ghee/oil/butter - 2 tablespoons
                                  • Cauliflower - 200 grams
                                  • Ginger - 5 grams
                                  • Peanuts - 20 grams
                                  • Curry leaves - 4/5
                                  • Onion - 50 grams
                                  • Mustard seeds - 1 tablespoon
                                  • Cumin seeds - 1 tablespoon
                                  • Coriander - for garnish
                                  • Chilli powder - 1 tablespoon

                                  Instructions

                                  1. Blitz the cauliflower florets in the food processor to achieve the consistency of couscous.
                                  2. In a kadai/wok/frying pan, add 2 tbsp of ghee, cumin and mustard seeds.
                                  3. When they sizzle, add curry, ginger, chilli, onion, and season with salt.
                                  4. Fry the onion till colour, then add in the cauliflower.
                                  5. Add water, cover and cook for 15 minutes.
                                  6. Stir whenever necessary and cook till there’s no water.
                                  7. Garnish with coriander and serve.

                                      3. Keto Style Paneer Steak

                                      Ingredients:

                                      • Salt to taste
                                      • Ground pepper - 1 tablespoon
                                      • Chilli powder - ½ tablespoon
                                      • Chilli flakes - ½ tablespoon
                                      • Ginger - garlic paste - 1 tablespoon
                                      • Garam masala - ½ tablespoon
                                      • Butter
                                      • Hung curd - 1 tablespoon

                                      Instructions

                                      1. Cut the paneer uniformly.
                                      2. Marinate the paneer with hung curd, pepper, chilli flakes, garam masala, chilli powder, and ginger garlic paste.
                                      3. Place the steak on a preheated pan with butter, add any leftover marinate.
                                      4. Fry both sides till golden and serve with cauliflower rice.

                                          4. Keto Samosas

                                          Ingredients:

                                          • Cauliflower - 170 grams
                                          • Onion - 1
                                          • Butter - 1 Tablespoon
                                          • Salt - ¾ tablespoon
                                          • Coriander - ½ tablespoon
                                          • Ginger minced - 1 tablespoon
                                          • Cumin - 1 ¼ tablespoon
                                          • Garam masala - 1 tablespoon
                                          • Red chilli flakes - ¼ tablespoon
                                          • Cumin seeds - ¼ tablespoon
                                          • Almond flour - ¾ cup
                                          • Cilantro chopped - ¼ cup
                                          • Mozzarella cheese - ¼ cup

                                          Instructions

                                          Filling

                                            • Preheat the oven over medium flame, add butter once it’s melted, toss cauliflower and onion.
                                            • Sprinkle salt and cook until they turn brown.
                                            • Add ginger root, ground cumin, garam masala, coriander, cumin seeds, and chilli flakes and allow the species to toast.
                                            • Preheat the oven to 375º Fahrenheit.

                                          Dough

                                            • Set up a double boiler.
                                            • Bring the water in the lower boiler to simmer, meanwhile add almond flour, cumin and salt to the top boiler and stir well until it forms a dough.
                                            • Knead the dough to distribute the species uniformly. Shape it into a rectangular form and cut it lengthwise and crosswise to form 4-inch squares.

                                          Assemble

                                          • Spoon the fillings into the square-shaped dough and fold them diagonally to form a triangle.
                                          • Make fork holes in each samosa to provide a place for steam to release. Bake for 14-17 minutes or until golden brown.

                                              5.  Keto Snack Balls with Coconut and Turmeric

                                              Ingredients:

                                              • Shredded coconut - 1 cup
                                              • Coconut butter - ½ cup
                                              • Turmeric - 1 tablespoon
                                              • Stevia for taste

                                              Instructions

                                              1. Melt the coconut butter and add the ingredients into a bowl.
                                              2. Take all the ingredients and mix them well, make them into balls.
                                              3. Keep in the freezer for 2 hours.

                                                  6. Pancakes With Cauliflower

                                                  Ingredients:

                                                  • Cauliflower - 1 small
                                                  • Mozzarella - ½ cup
                                                  • Eggs - 2
                                                  • Parmesan - 2 tablespoons
                                                  • Garlic powder - ½ tablespoon
                                                  • Black pepper - ¼ tablespoon
                                                  • Salt - ½ tablespoon
                                                  • Olive oil - 3 tablespoon

                                                  Instructions

                                                  1. Preheat the oven to over 200-degree F.
                                                  2. Put the cauliflower onto the food processor and make it into a rice form.
                                                  3. Mix parmesan, pepper, eggs, cauliflower, garlic powder and salt in a bowl.
                                                  4. Place a mixture onto the heated pan or the oven, flatten using a spoon and roast it with olive oil till it turns brown.
                                                  5. Flip it and serve.

                                                      Ingredients:

                                                      • Shredded mozzarella - 15 grams
                                                      • Almond flour - 18 grams
                                                      • Salt
                                                      • Coconut milk- 30 ml

                                                      • Coconut meat - 100 grams
                                                      • Coconut oil - 1 tablespoon

                                                      1. Form the batter by mixing all the ingredients.
